These delightful blackberry pie bars combine a buttery crust with a sweet and tart blackberry filling.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 cups fresh blackberries
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, powdered sugar, and butter; mix until crumbly.
  3. Press the mixture into the bottom of a baking dish to form the crust.
  4. In another bowl, mix blackberries, granulated sugar, lemon juice, and salt.
  5. Spread the blackberry mixture over the crust.
  6. In a separate bowl, whisk the eggs and vanilla; pour over the blackberries.
  7. Bake for 30-35 minutes or until set.
