A delicious and healthy casserole featuring tomatoes, zucchini, and turkey bacon.

Ingredients

  • 2 cups cooked rice
  • 1 cup diced tomatoes
  • 2 cups zucchini, sliced
  • 1 cup turkey bacon, chopped
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 375°F.
  2. In a large bowl, mix cooked rice, diced tomatoes, zucchini, turkey bacon, garlic powder, black pepper, and Italian seasoning.
  3. Transfer the mixture to a greased casserole dish.
  4. Top with shredded mozzarella cheese.
  5. Bake for 25-30 minutes, or until cheese is melted and bubbly.
