- 3 ripe bananas
- 1/3 cup melted coconut oil
- 1/2 cup honey or maple syrup
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1 1/2 cups whole wheat flour
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a mixing bowl, mash the bananas until smooth.
- Stir in melted coconut oil, honey or maple syrup, eggs, and vanilla extract.
- Mix in the baking soda, salt, and cinnamon.
- Gradually add the whole wheat flour and mix until just combined.
- Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Allow to cool before serving.
Notes
- For added flavor, consider adding chopped nuts or chocolate chips to the batter.
- Make sure the bananas are very ripe for the best sweetness.
