Best Ever Banana Muffins

Delicious banana muffins with a healthy twist!

Ingredients

  • 3 ripe bananas
  • 1/3 cup melted coconut oil
  • 1/2 cup honey or maple syrup
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 1/2 cups whole wheat flour

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, mash the bananas until smooth.
  3. Stir in melted coconut oil, honey or maple syrup, eggs, and vanilla extract.
  4. Mix in the baking soda, salt, and cinnamon.
  5. Gradually add the whole wheat flour and mix until just combined.
  6. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Allow to cool before serving.

Notes

  • For added flavor, consider adding chopped nuts or chocolate chips to the batter.
  • Make sure the bananas are very ripe for the best sweetness.
