  • 1/2 cup maple syrup
  • 1/4 cup coconut oil
  • 1 teaspoon vanilla extract
  • 2 cups mixed berries (fresh or frozen)
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine rolled oats, almond flour, maple syrup, coconut oil, and vanilla extract until well mixed.
  3. Press half of the mixture into a greased baking pan to form the base.
  4. In a separate bowl, mix the berries with cornstarch and lemon juice, then spread it over the crust.
  5. Top with the remaining oat mixture and gently press down.
  6. Bake for 25-30 minutes or until golden brown.
  7. Let cool before cutting into bars.
