Beef Skillet Enchiladas

Ingredients

  • 1 pound ground beef
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 cup corn kernels
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 8 flour tortillas
  • 1 cup shredded cheddar cheese

Instructions

  1. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  2. Add onion and garlic, cooking until soft.
  3. Stir in black beans, tomatoes, corn, chili powder, and cumin. Let simmer for 5 minutes.
  4. Place tortillas on top, sprinkle cheese over, cover, and cook until cheese is melted.
  5. Serve hot and enjoy!

  • Use ground turkey for a lighter option.
