  • 4 large eggs
  • 2 cups milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup brown sugar
  • 4 ripe bananas, sliced
  • 1/4 cup butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together eggs, milk, vanilla extract, ground cinnamon, and brown sugar.
  3. Cut the brioche bread into cubes and add to the egg mixture, stirring to combine.
  4. Fold in the sliced bananas.
  5. Pour the melted butter into a casserole dish and then pour the bread mixture on top.
  6. Bake for 45-50 minutes or until golden brown.
  7. Let cool for a few minutes before serving.
