Ingredients

  • 2 ripe bananas
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/4 cup granulated sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mash the ripe bananas.
  3. Mix in granulated sugar, brown sugar, and softened butter until well combined.
  4. Add eggs and vanilla extract, mixing until smooth.
  5. In another bowl, whisk together flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture until just combined.
  7. In a small bowl, mix cinnamon with 1/4 cup granulated sugar.
  8. Form dough into balls, roll in cinnamon sugar, and place on baking sheets.
  9. Bake for 10-12 minutes or until the edges are golden.
  10. Allow to cool for a few minutes before transferring to a wire rack.
