Authentic Jamaican Curry Chicken

  • 2 pounds chicken, cut into pieces
  • 2 tablespoons Jamaican curry powder
  • 1 tablespoon vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 2 cups coconut milk
  • 2 green onions, sliced
  • 1 Scotch bonnet pepper, whole
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the sliced onions and cook until softened.
  3. Stir in the minced garlic and sliced bell pepper, cooking for an additional 2 minutes.
  4. Add the chicken pieces and sprinkle with the Jamaican curry powder, cooking until the chicken is browned.
  5. Pour in the coconut milk and add the whole Scotch bonnet pepper.
  6. Season with salt and black pepper, then bring to a simmer.
  7. Cover the pot and cook for 30-40 minutes, or until the chicken is tender.
  8. Before serving, remove the Scotch bonnet pepper and sprinkle with sliced green onions.

Notes

  • For extra heat, you can chop the Scotch bonnet pepper before adding it to the pot.
  • Serve with rice and peas for a traditional meal.
