- 2 pounds chicken, cut into pieces
- 2 tablespoons Jamaican curry powder
- 1 tablespoon vegetable oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 2 cups coconut milk
- 2 green onions, sliced
- 1 Scotch bonnet pepper, whole
- 1 teaspoon salt
- 1 teaspoon black pepper
- Heat the vegetable oil in a large pot over medium heat.
- Add the sliced onions and cook until softened.
- Stir in the minced garlic and sliced bell pepper, cooking for an additional 2 minutes.
- Add the chicken pieces and sprinkle with the Jamaican curry powder, cooking until the chicken is browned.
- Pour in the coconut milk and add the whole Scotch bonnet pepper.
- Season with salt and black pepper, then bring to a simmer.
- Cover the pot and cook for 30-40 minutes, or until the chicken is tender.
- Before serving, remove the Scotch bonnet pepper and sprinkle with sliced green onions.
