Apple Cinnamon Muffins Recipe

  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 cup buttermilk
  • 2 large eggs
  • 2 cups peeled and diced apples

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, mix the melted butter, buttermilk, and eggs until well combined.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Fold in the diced apples.
  5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  7. Let cool for a few minutes before transferring to a wire rack.

Notes

  • For added flavor, sprinkle some extra cinnamon on top before baking.
  • These muffins freeze well; wrap them individually and store in the freezer.
